Spiced Papaya Pie With Graham Cracker Crust

If you like peach or apricot pie, you have to try this easy spiced papaya pie. Working with fresh papaya can be tricky for beginner home cooks as it is still a bit of an unknown fruit to the average American, but papayas have a tropical fruit flavor with coffee undertones, and are amazing raw, in fruit salads, and smoothies.

This spiced papaya pie recipe calls for fresh papaya chunks and a blend of delicious spices including cinnamon, nutmeg, and allspice. Using both light brown and white sugar makes the pie really rich and creamy. Though fresh papaya is ideal for this recipe and it can generally be found year-round thanks to imports, if you cannot find ripe, fresh papaya, you can use thawed frozen papaya chunks, which are typically flash frozen at the peak of their freshness. Just be sure to note that there may be more liquid and a softer texture once thawed.

Use a pre-made graham cracker pie crust makes this a quick and easy dessert, or try making your own graham cracker crust. This pie is good enough to serve alone, but you can always add a dollop of homemade whipped cream or a scoop of your favorite vanilla ice cream.

Ingredients

  • 1/2 cup light brown sugar
  • 1/4 cup granulated white sugar
  • 2 cups (about 1 medium papaya) fresh papaya (cut into 1-inch cubes*)
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground allspice
  • 1/8 teaspoon kosher salt
  • 1 large egg (beaten)
  • 1 (9-inch) graham cracker pie crust*

Steps to Make It

  1. Gather the ingredients.

  2. Preheat oven to 350 F.

  3. Whisk together brown sugar and white sugar. Add papayas and toss to coat. Allow mixture to rest for 10 minutes.

  4. Place papayas with its juices in a heavy saucepan. Simmer 10 minutes.

  5. After​ the first 10 minutes, stir in cinnamon, nutmeg, allspice, and salt.

  6. Continue to cook papaya and spices for another 10 minutes, stirring occasionally, until fruit is softened but not falling apart.

  7. Remove papaya mixture from the heat and let cool until lukewarm.

  8. Once cooled, stir in beaten egg with a large fork until well combined, taking care to leave the fruit in chunks.

  9. Pour papaya filling into pie crust. Bake for about 45 minutes.

  10. Allow ​the pie to cool before serving.

  11. Enjoy.
