This dish is actually not bad. Although I replaces the onion with garlic just as a matter personal preference. As for dry couscous it can be easy to dry out the couscous. Something as simply as putting the left overs in the fridge will dry it out over night. Any pasta will do that but because of the small size it happens fast. Also make sure the couscous is cooked with the right amount of water with a good tight lid and on the stove top instead of the microwave. It could make a big difference.

I don't know what I was expecting but this is some pretty dry stuff...Perhaps some type of sauce would help...so its on to new recipes...something with a little moisture and perhaps some added flavor.
