Had a lot of watermelon left over from a picnic and decided to try these muffins. I followed the recipe exactly and they were very tasty. After reading the previous review, I would recommend making them as written, without substitutions, because these were enjoyed by my family.

I made these muffins as written in the recipe except I substituted unsweetened applesauce for the butter and used regular sized chocolate chips. The resulting muffins were pretty tasteless. I would highly recommend adding a bit of watermelon extract (available from candy supply stores) to the recipe to make the watermelon flavor more apparent.
