Pumpkin Swirl Cheesecake

I wanted to make this for Thanksgiving so I gave it a trial run today. It was so wonderful and creamy I am making two for Thanksgiving. It was super easy and looked amazing. My kids who don't enjoy cheesecake ate a slice each. In my world that speaks for itself.

Not only does this look pretty, but it tastes amazing! It was very easy to make too. I cheated as well & used the premade 10"" graham crust, which tasted great. This was the hit of the Thanksgiving dinner I went to... everyone kept asking who made it! I will definitely make it again. It's a nice twist to the usual holiday pumpkin pie. I added a little whip cream on the side, but it didn't need it... it's great plain. Super tasty. Great recipe... I highly recommend trying it!

Several years ago, I bought the Philadelphia Cream Cheese recipe booklet of nothing but cheesecakes and this has been one of our favorites in the fall. The only difference in the recipes is that this one calls for an extra tbsp butter for the crust....and it isn't really needed if you want to cut fat. I like to substitute 1/3 less fat for the full fat cream cheese just to take a little guilt out of it. You wouldn't know it though because I've made it with full fat, and 1/3 less fat, and they're so similar you don't miss the extra fat....and I use lowfat ginger snaps too. It's still decadent and delicious. This is a great cheesecake!

Okay, I admit it. I cheated. I used 2 of the prepared graham cracker crusts from the grocery store. So what? I was nothing short of awesome and I got 2 pies out of it! It couldn't be easier, but looks quite pretty when you serve it. I love whipped cream with pumpkin pie, but didn't want to cover up the pretty swirl, so I squirt it on the side. Definitely a keeper. First and foremost, it tastes great. The texture is firm, but not too firm. It was easy to make and the eye appeal is a bonus. My family was definitely impressed with the taste and the look. I didn't have ginger snaps on hand, but did have graham crackers, so I made a little substitution there, and it was still phenomenal! Make this one, folks. You'll be glad you did.
