Made ketchup for the first time last year. It was great! Tomato season is on again and I am making the most of my ripe tomatoes. I did not change the recipe at all. We all just loved it, as it was a change from regular ketchup we have in Australia. Happy to recommend this recipe.

This ketchup came out great. It has a very unique taste which is not like the supermarket stuff but is still definitely ketchup. The amount of cayenne merely gives depth to the tomatoes. Add more if you want to get a spicier product. I took off one star because the ketchup came out too runny. It says that it will be a bit runny but this was close to unusable. I put it back on the stove and added another dose of corn starch dissolved in water. It is now what I consider ""runny'! Since there is a lot of variety in tomato juiciness, I would recommend simmering it on low heat until it's close to ketchup consistency and then adding the cornstarch/cayenne solution. This recipe is definitely a keeper and was fun to try out!
