I cooked Cornish game hens for Christmas dinner & used this recipe - they were absolutely fantastic. I had to omit the salt for my husbands diet, but they were still fantastic. As a note- I cooked up the glaze the day before (and added a couple of cloves of garlic & a handful of fresh cranberry's) Stuck it in the fridge & it was ready to go the next day. The day before, I also chopped up 1 green apple, 2 stocks of celery, 1/2 a red onion, couple cloves of garlic, a handful of cranberry's & some fresh sage - added some lemon juice & used that for stuffing the birds prior to baking - the were very moist and tasty!

We enjoyed this one immensely. I will use the glaze on baked chicken. Seems like it should work just as well, and cheaper. The cornish hens make such a pretty presentation at the table, but I usually reserve them for company due to cost. Thanks!

Followed recipe exactly and was disappointed. The problem is that the basting liquid doesn't penetrate so there is not much flavor. I may experiment with a different approach because I like the spice mix. Needs more chili powder. I might try marinating chicken thighs or breasts instead of using as a baste.

This recipe was a hit with friends I had over for dinner one night. It is now legendary and I am making it again tomorrow for someone who missed out and asked for it especially. Side dishes were Garlic Mashed Potatoes and Honey Glazed Carrots.
