This meatless meatloaf is low in fat and high in fiber. Top or serve with ketchup or tomato sauce like traditional meatloaf, if you wish.

Ingredients:
- 1 medium onion, chopped
- 6 cloves garlic, chopped
- 1 Tablespoon olive oil
- 2-1/4 cups corn flakes
- 2 cups non-fat cottage cheese
- 3 large brown eggs, well beaten
- 1 can (4 or 4.5 ounce) chopped green chile peppers
- 1/3 cup pine nuts (or substitute pecans or walnuts)
- 1 small bag (1/2 cup) chopped pecans (or walnuts)
- 1/4 cup vegetable broth (Swanson's preferred)
- 1/2 can (4.25 ounce) chopped black olives
- 1 teaspoon soy sauce, optional
- Seasoning to taste: black pepper, Italian seasoning, dried cilantro, dried fenugreek, dried dill, dried chives
Preparation:
Preheat oven to 350 degrees F.
Saute onions and garlic in olive oil. Let cool. Add corn flakes, cottage cheese, eggs, chile peppers, pine nuts, pecans, vegetable broth, black olives, optional soy sauce, and seasonings. Mix well. Add a splash of beer if it seems too dry.
Bake 1 hour in a lightly oiled loaf pan or casserole dish.
