Cottage Cheese Nut Loaf Recipe

This meatless meatloaf is low in fat and high in fiber. Use vegetable bouillon instead of chicken for a vegetarian dish.

Prep Time: 15 minutes

Cook Time: 1 hour

Total Time: 1 hour, 15 minutes

Ingredients:

  • 1/4 cup unsalted margarine
  • 1 medium onion, chopped
  • 2 eggs, well beaten
  • 2 cups bran or corn flake cereal
  • 2 cups low-fat cottage cheese
  • 1/2 cup chopped walnuts
  • 2 chicken or vegetable bouillon cubes (or 2 teaspoons powdered) dissolved in 1/4 cup hot water

Preparation:

Preheat oven to 350 degrees F.

Saute onions in margarine. Beat eggs. Add cereal, cottage cheese, walnuts, and bouillon. Mix well.

Bake 1 hour in oiled loaf pan or casserole dish.

Yield: 6 servings
