This meatless meatloaf is low in fat and high in fiber. Use vegetable bouillon instead of chicken for a vegetarian dish.

Ingredients:
- 1/4 cup unsalted margarine
- 1 medium onion, chopped
- 2 eggs, well beaten
- 2 cups bran or corn flake cereal
- 2 cups low-fat cottage cheese
- 1/2 cup chopped walnuts
- 2 chicken or vegetable bouillon cubes (or 2 teaspoons powdered) dissolved in 1/4 cup hot water
Preparation:
Preheat oven to 350 degrees F.
Saute onions in margarine. Beat eggs. Add cereal, cottage cheese, walnuts, and bouillon. Mix well.
Bake 1 hour in oiled loaf pan or casserole dish.
