If you have a bountiful harvest of tomatoes, you can make your own dried tomatoes in the oven. Plan ahead as they will need to slowly dry for 4 hours.

Cook Time: 4 hours
Total Time: 4 hours, 15 minutes
Yield: 8 servings

Preparation:
Remove the stem end from tomatoes. Cut in half lengthwise. Arrange the cut side up on an open rack.
Combine salt, sugar, and thyme. Sprinkle over tomatoes. Drizzle olive oil over tomatoes. Place rack in the oven. Bake at 250 degrees F. for 4 hours.
Serve as a garnish for veal, lamb, or fish.
Yield: 8 servings
