Orange Mashed Potatoes Recipe

These mashed potatoes get a tangy boost from orange juice, onions, and sour cream. They are not as sweet as you may think. They make a nice alternative to sweet potatoes, and kids love them.

Prep Time: 10 minutes

Cook Time: 20 minutes

Ingredients:

  • 3 pounds russet potatoes, peeled and cubed
  • 1/4 cup (4 tablespoons or 1/2 stick) butter
  • 2 cups finely chopped sweet onion
  • 1/2 cup sour cream
  • 3/4 cup orange juice
  • 1-1/2 teaspoons kosher salt or to taste
  • 1/4 teaspoon ground white pepper
  • Orange zest for garnish (optional)

Preparation:

Boil the potatoes in salted water until tender. Drain well.

Meanwhile, saute the sweet onions in the butter until lightly caramelized and golden. Remove from heat and let cool for 2 minutes. Whisk in the sour cream and orange juice.

Add the onion mixture, salt, and pepper to the cooked potatoes and mash by hand until well-combined. Garnish with orange zest to serve.

Yield: 8 servings
