This non-dairy mock sour cream is made with tofu. It is a great topping for baked potatoes or may be served as a chip dip. Sure to please all palates, including vegetarians.

Ingredients:
- 1 cup (8 ounces) soft tofu (not silken)
- 1 Tablespoon canola oil
- 1 Tablespoon fresh lemon juice
- 1/2 cup chopped chives
- Salt and pepper to taste
Preparation:
Place tofu, canola oil, and lemon juice in the bowl of a food processor or heavy-duty blender. Pulse until smooth and combined.
Remove mock sour cream and place into a bowl. Stir in chopped chives, along with salt and pepper to taste.
Serve mock sour cream with hot baked potatoes or as a chip dip.
