Creole Spice Mix Recipe

By Peggy Trowbridge Filippone, About.com

Filé powder and cayenne are the foremost ingredients in this Creole spice mix. Adjust the amount of cayenne up or down to suit your own tastes. Be sure to store away from heat and light. Since it contains filé powder, it is best to sprinkle the mixture on near the end of the cooking time.

Prep Time: 5 minutes

Ingredients:

  • 1/3 cup sweet Hungarian paprika
  • 1/3 cup dried basil
  • 1/3 cup dried thyme
  • 3 Tablespoons cayenne pepper
  • 2 Tablespoons filé powder
  • 2 Tablespoons chili powder

Preparation:

Combine paprika, basil, thyme, cayenne, filé powder, and chili powder in a glass spice bottle or other sealable container. Shake until well-combined.

Seal tightly and store in a dark cabinet away from heat and light. Use Creole spice mix within 6 months.

Shake container again before each use to be sure the mix is combined. Since it contains filé powder, it is best to sprinkle the mixture on near the end of the cooking time. Good on meats, vegetables, and seafood.

Yield: about 1-1/2 cups
