A bit of measuring and mixing and you have a spice blend good for meat or poultry in a matter of minutes. Feel free to modify the amounts to suit your personal taste. You may easily multiply the recipe, but I recommend you make up only enough to use within 1 month so it will remain fresh.

Ingredients:
- 1 teaspoon ground bay leaves
- 1 teaspoon cloves
- 1 teaspoon mace
- 1 teaspoon nutmeg
- 1 teaspoon paprika
- 1 teaspoon thyme
- 1/2 teaspoon allspice
- 1/2 teaspoon cinnamon
- 1/2 teaspoon savory
- 2 teaspoons freshly ground white pepper
Preparation:
Mix bay leaves, cloves, mace, nutmeg, paprika, thyme, allspice, cinnamon, savory, and pepper well in a bowl and store in a screw-top glass jar.
Use with any type of meat or poultry.
Yield: scant 1/4 cup
