Julia Child's Spice Blend Recipe

A bit of measuring and mixing and you have a spice blend good for meat or poultry in a matter of minutes. Feel free to modify the amounts to suit your personal taste. You may easily multiply the recipe, but I recommend you make up only enough to use within 1 month so it will remain fresh.

Prep Time: 10 minutes

Cook Time: 1 minute

Total Time: 11 minutes


  • 1 teaspoon ground bay leaves
  • 1 teaspoon cloves
  • 1 teaspoon mace
  • 1 teaspoon nutmeg
  • 1 teaspoon paprika
  • 1 teaspoon thyme
  • 1/2 teaspoon allspice
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon savory
  • 2 teaspoons freshly ground white pepper


Mix bay leaves, cloves, mace, nutmeg, paprika, thyme, allspice, cinnamon, savory, and pepper well in a bowl and store in a screw-top glass jar.

Use with any type of meat or poultry.

Yield: scant 1/4 cup

I've used Julia's spice rub for over 20 years. Stores well, all dry ingredients. Primary use: large fresh ham, three times a year, feeding 20 family and friends. You can't miss. It has a colonial, early American flavor and marvelous aroma while roasting.
