Healthier Omelets and Frittatas
If you are on a cholesterol-restricted diet, there is no need to deprive yourself. Omelets and frittatas can be made from egg substitutes or egg whites (add a pinch of turmeric to add yellow coloring). It won't be quite as rich, but you can round out the difference by using extra spices or strong-flavored fillings. On the other hand, if you are following a low carbohydrate or high protein plan, omelets and frittatas fit beautifully into these diet regimes.Omelet and Frittata Cooking Tips
Keep in mind that omelets will need to be made individually. If you are serving more than two people, you'll either need to have several omelets in multiple pans going at once or let your guests know they will not all be eating at the same time. For larger groups, consider frittatas instead of omelets. They can be made ahead of time and served at room temperature. My personal favorite is a frittata made with chopped sauteed new potatoes, onions, sweet bell peppers, and bacon bits, topped with shredded sharp cheddar and chives. Dessert omelets are filled with fruit or any variety of rich custard fillings, perhaps topped with a liqueur or simply powdered sugar. It's easy to experiment and difficult to go wrong.
Consider an omelet or frittata to surprise your loved one with breakfast in bed for a special occasion or just as a surprise. It's simple, fairly effortless, and you'll be sure to reap pleasing smiles for your thoughtfulness. Below you will find links to a selection of frittata recipes as well as omelets.
