Dry Bean ABC Soup Mix Recipe

Dry lentils, split peas, alphabet pasta, rice.htm]rice, and onion are combined into a dry bean soup mix to cook in 45 minutes. One cup of the soup mix is enough to make a batch of soup to serve 6. Place in a pretty jar to give as a kitchen gift or divide into portions to have handy for your own use.

Prep Time: 10 minutes

Cook Time: 45 minutes

Ingredients:

  • 2-1/2 cups (1 pound) dry lentils
  • 2-1/2 cups (1 pound) dry split peas
  • 2-1/2 cups (12 ounces) alphabet pasta
  • 1-1/4 cups long-grain rice
  • 1-1/4 cups dried minced onion

Preparation:

Combine lentils, split peas, alphabet pasta, rice.htm]rice, and onion flakes. Instructions for soup preparation follow below.

Each cup of mix will make soup to serve 6.

Yield: about 10 cups of mix

To make soup:


Fabulous Soup Mix Soup
9 cups boiling water
7-8 teaspoons beef bouillon
1 cup dry legume ABC soup mix (above)

Add bouillon and soup mix to boiling water and simmer, covered, for 45 minutes.

Yield: 6 servings

Deluxe Soup Variation:
Add only 4 to 5 teaspoons bouillon with soup mix. During the last 15 minutes of cooking time, add 1 (15-ounce) can diced tomatoes, undrained and 1 (12-ounce) can beef chunks, undrained and broken up, to soup.
