Lobster Orleans Recipe

From Culinary Arts Institute Encyclopedic Cookbook (Perigee Books), for About.com

Simple but decadent, a sour cream sauce spotlights lobster served over toast or cornbread. Crab is easily substituted for the lobster, if you wish.

Prep Time: 10 minutes

Cook Time: 20 minutes

Ingredients:

  • 2 medium onions
  • 2 Tablespoons butter
  • 1 cup flaked cooked lobster meat
  • Flour
  • 1 cup sour cream
  • Salt and pepper
  • Toast or corn bread

Preparation:

Dice onions and brown in butter. Dredge lobster with flour and add to onions. Cook for about 5 minutes, but do not brown. Pour sour cream over lobster and simmer for 15 to 29 minutes, season and serve on toast.

Yield: 4 servings
