Cooked lobster is mixed with lime juice, herbs, onion, capers, and mayonnaise into a luscious spread for crackers. Shrimp, crab, or crawfish may be substituted for the lobster.

Ingredients:
- 2 cups roughly chopped cooked lobster meat
- 1 Tablespoon fresh lemon or lime juice
- 1/4 cup minced fresh parsley, basil, or cilantro (fresh coriander)
- 1 Tablespoon finely minced onion
- 1 Tablespoon capers
- Mayonnaise as needed
- Salt and freshly ground black pepper to taste
Preparation:
Mix lobster, lemon or lime juice, herbs, onions, and capers together in a bowl. Add enough mayonnaise to bind. Season with salt and pepper, bearing in mind that capers are salty.
Chill until ready to serve (this will keep overnight just fine). Serve with crackers or small pieces of toast.
Alternative substitutions for lobster: cooked crab, crayfish or shrimp.
