Quick and easy tortellini pasta makes a filling base for shrimp cooked with shallots, basil, and Parmesan cheese.

Cook Time: 20 minutes
Total Time: 30 minutes
Ingredients:
- 1 (9-ounce) package fresh cheese tortellini
- 1/3 cup butter or margarine
- 1 pound fresh deveined, peeled medium shrimp
- 1 shallot, minced
- 2 Tablespoons chopped fresh basil or 2 teaspoon dried basil
- 1/2 cup Parmesan cheese
Preparation:
Cook tortellini pasta according to the package directions. Drain and set aside.
Melt butter in a large skillet over medium-high heat. Add shrimp, shallots, and basil, and cook for 5 minutes, stirring constantly, or until shrimp turn pink. Add tortellini and Parmesan. Toss gently. Garnish with basil.
Yield: 4 servings
