Traditional sloppy joes are made with ground beef. Try this delicious version made with tofu, mushrooms, and vegetables. Even the kids will like this vegetarian version.

Prep Time: 15 minutes

Cook Time: 15 minutes

Ingredients:

  • 2 Tablespoons butter
  • 1 cup chopped sweet onions
  • 1 cup sliced crimini mushrooms
  • 1/2 cup chopped green bell pepper
  • 1/2 cup chopped red bell pepper
  • 1/2 teaspoon kosher salt, or to taste
  • 1 clove garlic, minced
  • 1/4 teaspoon hot pepper sauce or to taste
  • 1 teaspoon chili powder
  • 2 teaspoons Worcestershire sauce
  • 1/4 cup ketchup
  • 1 (15 ounces) can tomato sauce
  • 2 pounds firm tofu, mashed into crumbles

Preparation:

Place a large heavy skillet over medium heat. Add butter, onions, mushrooms, green peppers, and red pepper. Sprinkle with the salt and saute about 5 minutes, until vegetables soften. Add garlic and cook an additional 1 minute to cook out the rawness.

Stir in hot sauce, chili powder, Worcestershire sauce, ketchup, tomato sauce, and tofu. Stir to combine and simmer for 5 minutes.

Serve Tofu Sloppy Joes in the traditional manner on buns. It also makes a great topping for pasta or rice.

"We're not vegetarians, but I like to try a meatless meal per week. This was easy to make and the kids didn't miss the meat at all."
