Horseradish Slaw Recipe

By Peggy Trowbridge Filippone, About.com

Horseradish gives some zip to traditional coleslaw made with green and red cabbage. Keep in mind that prepared horseradish mellows with age in the bottle. The fresher the horseradish, the more pungent the slaw will be. Feel free to adjust the amount to suit your own tastes.

Prep Time: 15 minutes

Ingredients:

  • 1 small savoy cabbage, shredded
  • 1 small red cabbage, shredded
  • 1/2 small sweet onion, sliced very thin like the cabbage
  • 1 cup sour cream
  • 1 cup real mayonnaise (not salad dressing)
  • 2 Tablespoons prepared horseradish
  • 1/2 teaspoon granulated sugar or sugar substitute
  • 1/4 cup cider vinegar
  • 1/2 teaspoon celery seeds
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper

Preparation:

Place savoy cabbage, red cabbage, and sweet onion in a large bowl.

Whisk together sour cream, mayonnaise, horseradish, sugar, vinegar, celery seeds, salt, and pepper until well-combined.

Pour dressing over cabbage and sweet onions. Toss to mix.

Refrigerate at least 4 hours or overnight before serving.

Yield: 10 to 12 servings
