Apple Salad Recipe

Diabetic salad made with apples, celery, raisins, and low-calorie mayonnaise is delicious enough for the whole family.

Prep Time: 10 minutes

Ingredients:

  • 2 apples, diced and unpared
  • 1/2 cup diced celery
  • 1/4 cup raisins
  • 1 Tablespoon lemon juice
  • 1 Tablespoon reduced-calorie mayonnaise
  • Lettuce leaves (optional)

Preparation:

Combine apples, celery, raisins, lemon juice, and mayonnaise. Mix well. Refrigerate until served. Serve apple salad on lettuce leaves, if desired.

Yield: 8 servings

Each serving: 1/4 cup
Exchange: 1 Fruit
