Vanilla Fruit Salad Recipe

Pineapple, Mandarin oranges, apples, and vanilla pudding make a quick dessert salad to feed a crowd.

Prep Time: 15 minutes

Ingredients:

  • 5 (20 ounces) cans pineapple chunks in juice
  • 1 (8 ounces) can pineapple chunks in juice
  • 4 (5.1 ounces) packages instant vanilla pudding mix
  • 8 (15 ounces) cans mandarin oranges, drained
  • 10 medium apples, chopped

Preparation:

Drain pineapple, reserving juice. Add water to make 6 cups.

Place pudding mixes in a large bowl. Stir in pineapple juice until thickened, about 4 to 6 minutes.

Fold in pineapple, Mandarin oranges, and apples.

Pour about 8 cups each in four 13 x 9 x 2 inch pans that have been coated with non-stick vegetable spray.

Refrigerate.

Yield: 64 servings
