Sardine and Apple Salad Recipe

From Mystic Seaport's Seafood Secrets Cookbook (Favorite Recipes Press), for About.com

It may seem an odd combination, but the sweetness of the apple plays well with the saltiness of the sardines. The sour cream pulls it all together.

Prep Time: 10 minutes

Ingredients:

  • 2 (3-1/4 ounce) cans sardines
  • 1 cup red apple, unpeeled and diced
  • 1 Tablespoon lemon juice
  • 1/2 cup celery, chopped
  • 1/3 cup sour cream

Preparation:

Drain sardines and cut into bite-size chunks. Sprinkle apple cubes with lemon juice.

Toss with celery, sour cream, and sardines until well coated. Serve with pumpernickel toasts.

Yield: 8 servings
