Cranberry Soda Molded Salad Recipe

This classic gelatin salad made with cranberry sauce, cream cheese, pineapple, pecans, and lemon soda never goes out of style.

Prep Time: 15 minutes

Ingredients:

  • 1 (3-ounce) package cranberry gelatin
  • 1/4 cup boiling water
  • 1 cup cola or lemon-lime soda (not diet) OR seltzer
  • 1 can jellied cranberry sauce
  • 1 (3-ounce) package cream cheese, at room temperature
  • 1 (8-ounce) can crushed pineapple (not fresh), well drained
  • 1/2 cup chopped pecans

Preparation:

Stir gelatin in boiling water until dissolved. Let cool until barely warm. Stir in soda. Chill until thickened but not quite set.

Whip cream cheese until smooth and creamy. Blend in cranberry sauce, then fold in pineapple and pecans. Fold into gelatin. Pour into decorative mold or pan and refrigerate until firm. Unmold and serve.

Yield: 8 servings
