Yogurt Tarragon Salad Dressing Recipe

From The Blue Ribbon Country Cookbook by Diane Roupe (Clarkson Potter), for About.com

This salad dressing is lower in fat thanks to lowfat yogurt yet full of the licorice flavor of tarragon. To save even more fat calories, try using non-fat yogurt.

Prep Time: 5 minutes

Ingredients:

  • 8 ounces plain, lowfat yogurt
  • 2 Tablespoons tarragon white wine vinegar
  • 1 Tablespoon minced onions (optional)
  • 1/4 teaspoon dried leaf tarragon
  • 1/8 teaspoon pepper
  • Dash of cayenne pepper

Preparation:

In a small mixing bowl, place the yogurt, vinegar, onions (if using), tarragon, pepper, and cayenne pepper; stir to combine. Cover and refrigerate up to 1 week.

Yield: About 1 cup

Note: This recipe can be easily halved.
