Chocolate mousse is a rich pudding that is light in texture due to whipped cream. A shot of coffee and orange extract lends an orange cappuccino flair. If you want to ramp up the chocolate flavor even more, substitute the equivalent amount of dark chocolate for the chocolate chips. To serve, garnish with additional whipped cream and your favorite fruits.
Prep Time: 15 minutes
Cook Time: 10 minutes
Refrigeration Time: 1 hour
Total Time: 1 hour, 25 minutes
Yield: 6 to 8 servings
Ingredients:
- 8 ounces semisweet chocolate chips
- 2 Tablespoons strong coffee
- 2 Tablespoons orange extract
- 1 egg yolk
- 2 egg whites
- A pinch of salt
- 2 Tablespoons sugar
- 1/2 cup heavy cream (or 1/2 carton of Cool Whip®)
Preparation:
Melt the chocolate, with coffee added, over low heat. Remove from heat and add first the orange extract and then the egg yolk, stirring until the mixture is smooth.
In another bowl, beat the egg whites and salt; add the sugar and beat with an electric mixture until stiff peaks form. Lastly, whip the cream until it is stiff; fold into the egg whites.
Fold egg white mixture into the chocolate mixture. Place in the refrigerator, and chill mousse until ready to serve.
Yield: 6 to 8 servings
