This quick no-bake pie has the texture and flavor of Mandarin orange sherbet with a decadent layer of chocolate. Plan ahead to refrigerate at least a few hours before serving.

Ingredients:
- 1/2 cup water
- 1/2 cup reserved orange syrup
- 1 (3 ounces) package orange flavor instant gelatin
- 1-1/2 cups (1 pint) heavy whipping cream
- 1 cup sugar
- 1 (8 ounces) package cream cheese, softened
- 1 teaspoon vanilla
- 1 (1 ounce) square semi-sweet baking chocolate, melted and cooled
- 1 (9 ounce) prepared graham cracker pie crust
- 1 (11 ounces) can Mandarin oranges in light syrup (drained, reserve 1/2 cup syrup - see above)
Preparation:
In small pan, heat water and reserved orange syrup. Stir in gelatin until dissolved. Remove from heat and let cool.
Beat whip cream until peaks form; set aside.
Cream sugar, cream cheese, and vanilla. Pour gelatin mixture into cheese and sugar mixture, and blend well. Fold in whipped cream.
Remove 1 cup of this mixture and stir in chocolate. Pour into pie crust and smooth over.
Place pie in freezer for 10 to 15 minutes, or until firm. Gently stir Mandarin orange into remaining mixture; pour over chocolate. Refrigerate for several hours until firm (or until ready to serve).
For a decorative effect, beat remaining whipping cream with 1 tablespoon powdered sugar, and use for garnish.
Yield: 8 servings
