Ingredients:
- 1/4 cup minced sweet onion
- 2 Tablespoons butter
- 1-3/4 cups chicken broth
- 1 teaspoon fresh lemon juice
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1-1/2 teaspoons kosher salt
- 1/2 cup frozen baby peas
- 1 cup plain quick-cooking couscous
Preparation:
Gently saute sweet onion in the butter until the onion is translucent. Add chicken broth, lemon juice, onion powder, garlic powder, kosher salt, and baby peas. Bring to a boil. Remove from heat, stir in couscous, cover and let stand for 5 minutes to absorb the liquid. Fluff couscous with a fork before serving.Entree Suggestion: Easy Chicken Piccata
