Savory Chicken Couscous Recipe

Couscous makes a delicious alternative to rice or potatoes. This easy dish cooks up in less than 10 minutes with very little effort and goes well with meat, poultry, pork, and fish.

Prep Time: 5 minutes

Cook Time: 5 minutes

Ingredients:

  • 1/4 cup minced sweet onion
  • 2 Tablespoons butter
  • 1-3/4 cups chicken broth
  • 1 teaspoon fresh lemon juice
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1-1/2 teaspoons kosher salt
  • 1/2 cup frozen baby peas
  • 1 cup plain quick-cooking couscous

Preparation:

Gently saute sweet onion in the butter until the onion is translucent. Add chicken broth, lemon juice, onion powder, garlic powder, kosher salt, and baby peas. Bring to a boil. Remove from heat, stir in couscous, cover and let stand for 5 minutes to absorb the liquid. Fluff couscous with a fork before serving.
