Sunny Breakfast Couscous Cereal Recipe

Loaded with orange and apple juices, this healthy couscous breakfast is made in a matter of minutes in the microwave. The almonds are optional, but delicious.

Prep Time: 5 minutes

Cook Time: 5 minutes

Ingredients:

  • 3/4 cup water
  • 1/4 cup fresh-squeezed orange juice
  • 1/2 cup couscous
  • 1 teaspoon finely grated orange zest
  • 1 Tablespoon honey
  • 1 Tablespoon frozen apple juice concentrate
  • Dash ground cinnamon
  • 2 Tablespoons finely chopped blanched almonds

Preparation:

Combine water, orange juice, couscous, orange zest, honey, apple juice concentrate, and almonds in a 1-quart microwaveable casserole dish. Cover. Microwave on high until the liquid is absorbed and the couscous is tender, 5 to 6 minutes. Let stand, covered, for 1 minute more.

Yield: 4 servings
