Guide Review - Nesco® 18-Quart Roaster Oven

I remember my Granny-Ma's beloved Nesco® roaster when I was growing up, so it was with great interest that I tested this 21st century edition. She always cooked the turkey in the Nesco® and used the regular oven for all the other side dishes.

The Nesco® roaster oven is a countertop stand-alone oven with a temperature dial just like a standard range oven. Unlike a low-high slow cooker, you can regulate the temperature at will to suit your recipe.

Although these roasters are most-loved for freeing up the standard oven for baking the turkey during holidays, it can also be used for steaming, baking desserts, and as a buffet server.

Unlike Grandma's original standby, the current models have removable cookwell inserts. The stainless steel model is easy to clean, although bulky to maneuver in a standard sink. Put it in your dishwasher, if you have one to accomodate such a size, but I don't recommend it. Dishwasher detergents can eventually pit the surface. Just let it soak in hot soapy water and use a non-abrasive cleaner and scrubber for tough spots.

You'll probably need to either pre-brown meats or follow special instructions to achieve a golden turkey. The closed cooking environment is not conducive to browning.

Thumbs up on this one, but plan ahead for storage space. It's big.

Second Oven Does the Trick, Member arbpen

I seriously don't know what I would do without my Nesco 18 quart roaster oven. Any time I don't want to heat up my kitchen, or if I have something large that I want to cook, I use my roaster. I have my roaster on an old wheeled typewriter table, with a milk crate under it that can hold the buffet pieces when I do not need them. I just wheel my nesco over to the counter, put the food into the cooking well, put the cooking well in to the Nesco and plug it in, leaving my counter and oven free for other things. As to browning issues, my Nesco has a fan that is used for browning, but I don't use it. The only thing I care about getting browned is turkey, and I start it in a 450 oven for 30 minutes, and then transfer it to the preheated Nesco for the remaining cooking. Perfect turkey every time. I made chili in my 18 quart for my son's birthday party - at the park. The chili was ready to serve, we just put the Nesco in the car, and took it to the park. It was a cold day, and hot chili with all the fixings was gratefully gobbled up by all. I make the Christmas ham, and the Christmas Eve prime rib in the Nesco. I always make meatloaf in the Nesco. I have baked cookies in it, heated up casseroles, who knows what else. When I want to keep something warm, without having it dry out, I put it into the Nesco. When I fry chicken, I let it sit in a preheated Nesco for about 10 minutes, just to be sure it is thoroughly cooked - and it does not dry out. I have a cookbook that came with the Nesco that has tons of recipies. I haven't even started using them - yet. My Nesco will be around for years, and will be the producer of many edible delights.
