Green Tomato Marmalade Recipe

This is a good way to use up those green tomatoes in your garden. The sweet marmalade also contains oranges.

Prep Time: 30 minutes

Cook Time: 4 hours

Ingredients:

  • 1 cup water
  • 2 oranges, thinly sliced
  • 1 lemon thinly sliced
  • 6 large (about 4 pounds) green tomatoes chopped
  • 4 cups sugar
  • 1/2 teaspoon salt

Preparation:

Cook water, oranges, and lemons in a Dutch oven over medium heat 17 to 20 minutes or until fruit is tender. Add tomatoes, sugar, and salt, stirring until sugar dissolves.

Bring to a boil, stirring constantly; reduce heat, and simmer, stirring occasionally, 3 hours and 30 minutes or until mixture thickens.

Pour hot marmalade into hot jars, filling to 1/4 inch from top. Remove air bubbles and wipe jar rims. Cover at once with metal lids, and screw on bands.

Process in boiling-water bath 10 minutes.

Yield: 3 pints
