Carrot Marmalade Recipe

Carrots add an interesting flavor to lemon and orange marmalade. This is a very simple recipe to make.

Prep Time: 20 minutes

Cook Time: 30 minutes

Ingredients:

  • 1 pound (456 g) carrots
  • 2 lemons
  • 1 orange
  • 4 cups (1 L) sugar
  • Boiling water

Preparation:

Wash and peel carrots. Squeeze juice out of lemons and remove seeds. Put carrots and lemon rind through food chopper. Cut the orange into very thin slices and remove seeds.

Combine all ingredients and add 1/2 cup (120 mL) boiling water. Cook until a little of the mixture gels. Pour marmalade into glasses and refrigerate.

Yield: about 6 half-pints
