• You can make these as long or short as you want, although you'll want at least three turns around the skewer to get the spiral effect.
• If you have a steady hand, you can make the thickness less than 1/4-inch for a more delicate spiral, but they won't stand erect.
• Leave the spirals standing erect or flatten them. Curl them by putting the ends together or leave them straight. Your choice.
• You can use other vegetables in place of cucumbers such as zucchini, parboiled al dente carrots, radishes, beets, and others with a firm core.
