English cucumbers, also called hothouse cucumbers, are best for this garnish. If you use standard cucumbers, look for a straight cucumber of a thin and uniform diameter. Wash and dry cucumber.

You will need:
• English (hothouse) cucumbers.
• Sharp paring or boning knife.
• Optional fillings for the centers of the curls. Suggestions include cherry or grape tomatoes (whole or cut into rosettes), small radishes, carrots carved into cones, and watermelon, cantaloupe, mango, or papaya balls.
