Candied Grapefruit Pith Recipe

Instead of throwing away grapefruit pith, candy it and use as a spread. This is a family heirloom Cuban recipe shared by one of our Home Cooking readers.

Prep Time: 30 minutes

Cook Time: 30 minutes

Ingredients:

  • Grapefruit pith
  • Sugar
  • Cinnamon stick
  • Water

Preparation:

Save the juice or sections and skin of the grapefruit for other uses. Keep the pith (white part under the skin) that is usually discarded. Leave the pith in large pieces.

Take grapefruit pith pieces and soak them in water for about an hour. Squeeze out all of the water. Put them in water to cover and bring to a boil. Again, take them out and squeeze out all of the water. Repeat this 2 more times. (This process removes the acidity.)

Make a simple syrup 1 cup sugar, 1 cup water and 1 stick cinnamon. Place the grapefruit piths in the syrup mixture and bring to a boil. Cook until thickened.

Refrigerate and eat cold by themselves or with cream cheese and crackers.
