These recipes all use fresh tuna as an ingredient. If you do not care for tuna, most of these recipes can be adapted for use with fresh or canned salmon or other firm-fleshed, full-flavored fish.

Fresh tuna season runs from late spring to early fall, but frozen steaks are available year-round. The flesh of the tuna can range from very light pink (nearly white) to deep reddish brown, depending on the variety. Learn all about tuna fish before trying one of the many tuna recipes.
