Brisket Storage and Freezing
Fresh brisket will be fine in the coldest part (35 to 40 degrees F.) your refrigerator for up to five days before cooking, and up to eight days if your refrigerator section is kept at a temperature lower than 34 degrees F. When wrapped airtight and frozen quickly, fresh brisket can be frozen from six to twelve months.Cooked brisket (without liquid or gravy) may be refrigerated up to four days or frozen up to two months. If the brisket is stored in the gravy, it may be refrigerated up to two days and frozen up to three months.
