Sunchoke Measures and Equivalents
The skin of Jerusalem artichokes or sunchokes is perfectly edible. Simply scrub thoroughly and proceed.Although there will be slight differences in texture and flavor, artichoke hearts, salsify, water chestnuts, jicama, parsnips, and potatoes may be substituted in many Jerusalem artichoke recipes.
• 1-1/2 pounds sunchokes = 4 servings
• 1 pound peeled, thin-sliced sunchokes = 3 cups raw
• 1 pound raw sunchokes = 2 cups cooked
• 1 pound chopped sunchokes = 2 cups
• 3 to 4 sunchokes = 1 serving
• 1 pound cooked sunchokes = 1-1/2 cups mashed
• 1/4 pound sunchokes = 1 serving
