It is called ham because the fish is cured. Fresh salmon is marinated in a honey, soy sauce, and garlic mixture to cure. There is no ham in this dish, and no cooking involved. Plan ahead to marinate 36 to 48 hours in the refrigerator.

Ingredients:
- 1 side salmon about 2 to 2-1/2 pounds, skin and bones removed
- 2 cups soy sauce
- 3/4 cup honey
- 6 Tablespoons water
- 3 cloves garlic, minced
- 2 teaspoons freshly ground pepper
Preparation:
Place salmon on a platter. Combine soy sauce, honey, water, garlic, and pepper and spoon over fish. Cover and refrigerate. Marinate fish for 36 to 48 hours. Turn fish once in marinade. Remove salmon from marinade. Pat dry and cut into thin slices diagonally.
Yield: 6 to 8 servings
