Fat-Free Caramel Sauce Recipe

This delicious fat-free caramel sauce uses nonfat yogurt rather than milk or cream for a healthier dessert topping.

Prep Time: 15 minutes

Ingredients:

  • 3/4 cup water
  • 1/2 cup sugar
  • 1/2 cup firmly-packed dark brown sugar
  • 1/4 cup nonfat yogurt
  • 1 teaspoon vanilla extract

Preparation:

Place granulated sugar and brown sugar in a heavy saucepan. Pour water into the center, then make a large X across the sugar with your fingertip to let the water seep through. Do not stir.

Turn heat to medium-high and bring to a boil. Without stirring, boil for 8 minutes. Remove from heat and let it come to room temperature.

Once cooled, beat in the nonfat yogurt and vanilla.

Use as a topping for ice cream, puddings, and cakes.

Yield: about 1 cup

"The flavor is great, but it's a pure water consistency. I hate to add cornstarch for obvious reasons, but what else can you do to make it thicker?"
