Mandarin Orange Frozen Dessert Recipe

Delicious frozen no-bake dessert uses mandarin oranges, whipped topping, and pecans for an easy finish. Plan ahead to let it freeze for 2 hours before serving.

Prep Time: 15 minutes

Ingredients:

  • 60 buttery crackers (such as Ritz), crushed
  • 1/4 cup light brown sugar
  • 1/2 cup (1 stick or 8 Tablespoons) butter, melted
  • 1 (6 ounces) can unsweetened frozen orange juice concentrate, thawed
  • 1 can sweetened condensed milk (not evaporated)
  • 1 (8 ounces) container whipped topping
  • 2 cans (11 ounces each) mandarin oranges, drained
  • 1/4 cup chopped pecans

Preparation:

Whisk together crushed crackers and sugar. Stir in melted butter. Remove 1/4 cup of the mixture and set aside for garnish. Press the remainder evenly into the bottom of a 9- by 13-inch glass casserole dish.

Beat orange juice concentrate with the sweetened condensed milk until smooth. Fold in whipped topping and mandarin oranges. Pour into prepared crust. Sprinkle with reserved crumb mixture and pecans.

Freeze at least 2 hours before serving.

Yield: 12 to 24 servings, depending on cut size
