Peanut Butter-Chocolate Chip Mini-Muffins Recipe

Peanut butter mini-muffins are stuffed with chocolate chips. These little gems are quick and easy to make. Great for kids and bake sales.

Prep Time: 15 minutes

Cook Time: 12 minutes

Total Time: 27 minutes

Yield: 48 servings

Preparation:

Preheat the oven to 350 degrees F. Line mini-muffin tins with paper liners.

In a large bowl, combine the peanut butter and butter until well blended. Mix in sugar, eggs, and vanilla extract.

In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Add to peanut butter mixture along with the milk and mix until combined. Batter will be thick. Spoon into lined muffin tins, filling each one 3/4 full. Press 4 chocolate chips into the center of each mini-muffin.

Bake for 12 to 14 minutes, until edges are lightly browned. Cool on racks to room temperature. They are fine on their own, however, you may frost with chocolate icing, if desired. These are even better a day or two after baking.

Yield: about 48 mini-muffins
