Peanut butter mini-muffins are stuffed with chocolate chips. Quick and easy to make. Great for kids and bake sales.

Ingredients:
- 3/4 cup peanut butter
- 2 tablespoons butter, melted
- 1 cup sugar
- 2 eggs
- 1 Tablespoon vanilla
- 1-1/2 cups flour
- 1-1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/8 teaspoon salt
- 1/2 cup milk
- 1 cup (6-ounces) semi-sweet chocolate (about)
Preparation:
Preheat the oven to 350 degrees F. Line mini-muffin tins with paper muffin cups.
In a large bowl, combine the peanut butter and butter until well blended. Mix in sugar, eggs, and vanilla extract.
Combine flour with baking powder, baking soda, and salt. Add to peanut butter mixture along with milk. Mix well. Spoon into lined muffin tins. Press 4 chocolate chips into the center of each muffin.
Bake for 10 to 12 minutes, until edges are lightly browned. Cool and frost with chocolate icing, if desired. These are even better a day or two after baking.
