Pineapple Banana Cheese Dessert Recipe

This tasty dessert is made with cottage cheese, pineapple, banana, and gelatin. You may cut the fat and calories, if you wish, by using non-fat evaporated milk, powdered milk, and cottage cheese.

Prep Time: 15 minutes

Ingredients:

  • 1 cup evaporated milk (not sweetened condensed)
  • 1/2 ounce (2 packets) unflavored gelatin
  • 1 cup pineapple juice
  • 1 cup powdered milk
  • 2 medium bananas, mashed
  • 1 cup cottage cheese
  • 1 cup crushed pineapple
  • 1/2 cup chopped walnuts

Preparation:

Measure the evaporated milk and place in the freezer just until ice crystals just begin to form.

Sprinkle gelatin over pineapple juice in a small saucepan. Let sit 5 minutes to bloom. Gently heat, but do not boil, and stir until gelatin is dissolved. Remove from heat.

Place milk in a chilled mixing bowl. Beat on high speed until stiff peaks form. Blend in powdered milk, bananas, and cottage cheese on medium speeed until well-combined. Fold in pineapple.

Pour into a 9-inch square glass casserole dish. Sprinkle with the walnuts. Refrigerate at least 2 hours until firm.

Yield: 9 to 12 servings, depending on cut size
