Butterscotch Nut Bars in a Jar Recipe

Delicious cookie bars with butterscotch chips and toasted pecans or walnuts make a great kitchen gift for any occasion, especially Christmas. The ingredients are attractively layered in a jar with cooking instructions attached.

Prep Time: 20 minutes

Cook Time: 30 minutes

Ingredients:

  • 1/2 cup butterscotch chips
  • 1/2 cup toasted chopped pecans or walnuts, cooled (see Note)
  • 1/2 cup light brown sugar, packed
  • 1 cup biscuit baking mix
  • 1/2 cup dark brown sugar, packed
  • 1 cup biscuit baking mix

Preparation:

Use a 1-quart, wide-mouth canning jar for this recipe.

Begin by layering the butterscotch chips, pecans or walnuts, and light brown sugar (crumble with your fingers after measuring to make the layer even), in that order. Gently press down the brown sugar to seal the layer. Add baking mix and dark brown sugar in layers. Once again, gently pack down the brown sugar layer. Add the last layer of baking mix. If the jar is not full, fill it with another layer of butterscotch chips or nuts. If it is too full, gently tap on the counter to let contents settle. Seal tightly with the lid.

Decorate the lid with a square of fabric and a ribbon if desired. Be sure to attach the baking instructions on a gift card.

Chewy Butterscotch Nut Bars in a Jar Baking Instructions

Jar contents
1/2 cup (1 stick or 8 Tablespoons) butter, melted
1 large egg, lightly beaten
1 teaspoon pure vanilla extract

Preheat oven to 350 F. Line an 8 x 8-inch baking pan with nonstick foil or use vegetable spray to coat the pan.

In a medium bowl, combine contents of the jar, butter, egg, and vanilla with a wooden spoon just until blended. Press into the prepared pan and bake for 18 to 22 minutes until light golden and center is almost set. Let cool to room temperature before cutting to serve.

Yield: Makes 16 bars

Note: The pecans or walnuts may be easily toasted in a microwave. Place them on a micro-safe plate. Microwave on High for 4 to 5 minutes, stirring once every minute to redistribute for even toasting. Let cool before using.
