From The Perfect Recipe by Pam Anderson (Houghton Mifflin), About.com Guest

Fresh blueberries, strawberries, and/or raspberries combine with Grand Marnier to make a delicious dessert sauce. Serve it on cheesecake, shortcake, ice cream or any dish worthy of a sweet sauce with a kick.

Prep Time: 5 minutes

Ingredients:

  • 2 pints berries (blueberries, strawberries, raspberries), rinsed, (stemmed if using strawberries)
  • 4 to 6 Tablespoons sugar
  • 2 Tablespoons orange liqueur (Cointreau, Triple Sec or Grand Marnier)

Preparation:

Put 1 pint berries in a medium bowl. Use a pastry cutter, fork or potato masher to mash berries coarsely. Puree remaining berries with 4 tablespoons sugar in a food processor fitted with a steel blade. Mix with mashed berries, along with liqueur. Adjust flavorings, adding more sugar if necessary. Let stand at room temperature to allow flavors to blend, at least 30 minutes. (Sauce can be covered and refrigerated for up to 4 hours.)

Use as a topping for cheesecake, shortcake, ice cream or whereever your imagination takes you.

Yield: 2-1/2 to 3 cups
