Amaretto Chantilly Recipe

This easy frozen dessert has a surprisingly light texture yet is full of the rich flavors of almonds and cherries. For a flavor variation, try substituting hazelnut liqueur and hazelnuts instead of amaretto and almonds.

INGREDIENTS:

  • 3-3/4 cups miniature marshmallows
  • 2/3 cup amaretto liqueur
  • 1 Tablespoon lemon juice
  • 1/4 teaspoon almond extract
  • 1/2 cup chopped maraschino cherries
  • 2 cups heavy cream, chilled
  • 2 Tablespoons finely chopped almonds

PREPARATION:

Place 1 inch of water in the bottom of a double-boiler and bring to a simmer. Place marshmallows and amaretto in the top and melt slowly, stirring often, until smooth. Add lemon juice, almond extract, and maraschino cherries and stir. Remove from heat and cool 10 minutes.

In a separate bowl, beat heavy cream until soft peaks form. Fold into amaretto marshmallow mixture.

Divide mixture into 8 individual serving bowls and sprinkle with chopped almonds. Place on a tray, cover with plastic wrap, and freeze.

Yield: 8 servings
