Papaya Ice Cream Recipe

Papaya and lime lend a tropical flavor to this rich ice cream. If you do not have access to fresh papaya, try substituting 1-1/2 to 2 cups of fresh peaches or nectarines.

Total Time: 30 minutes

Ingredients:

  • 3/4 cup granulated white sugar
  • 2 eggs, beaten
  • 1-3/4 cups heavy whipping cream
  • 1 ripe papaya, peeled, seeded, and sliced
  • 1 fresh lime (see instructions)

Preparation:

Whisk together sugar, eggs, and cream in a heavy saucepan. Cook over low heat, while stirring, until thickened enough to coat the spoon. Do not boil. Remove from heat and let cool to lukewarm, stirring occasionally to prevent a skin.

Place the papaya into the bowl of a food processor fitted with the metal blade or a heavy-duty blender.

Remove the zest from the lime using a microplane or grater, then juice the lime. Add the lime zest and lime juice to the papaya and process into a puree.

Add papaya puree to the thickened cream, stirring to thoroughly combine.

Pour into ice cream machine and freeze according to manufacturer's manual.

Yield: 1 quart papaya ice cream

I was concerned when I couldn't find any recipes for papaya ice cream, and figured the first one wouldn't be the keeper. I was wrong, this one is going in my recipe book. The ONLY thing I did differently was to add a teaspoon of vanilla extract to the cooled mixture before I put it in the ice cream freezer. I used a Cuisinart, and it was ready in 20 minutes. Fantastic!
