- 1/2 cup chocolate chips
- 1/2 cup peanut butter
- 1/4 cup graham cracker crumbs
- 1/4 cup confectioners' sugar
- 1/2 teaspoon pure vanilla extract
- Brownie Bites:
- 1 package (18.4 ounces)fudge or dark chocolate cake mix
- 2 large eggs, lightly beaten
- 1/2 cup vegetable oil
- 1/4 cup water
- Confectioners' sugar for sifted topping, optional
Melt chocolate chips in microwave. Cool slightly until warm and liquid but not hot. Meanwhile, combine peanut butter, graham cracker crumbs, sugar, and vanilla. Mix in melted chocolate. Chill 30 to 45 minutes, until firm.
In a separate bowl, combine fudge cake mix, eggs, oil, and water by hand, just until mixed. A few small lumps are fine. Fill mini-muffin cups half full.
Roll half-teaspoonsful of the chilled peanut butter chocolate mix into small balls and press into the center of each mini-muffin cup.
Bake 10 to 12 minutes. Do not over-bake or they will become dry. Remove to racks and let cool completely to room temperature. Once cooled, sift confectioners sugar over tops, if desired or drizzle with melted chocolate.
Yield: about 60 brownie bites
