No-Bake Pastel Haystacks Recipe

No baking necessary for these cookies made of chow mein noodles, chocolate, cashews, and marshmallows. If you are not a fan of candied ginger, feel free to omit it.

Prep Time: 20 minutes

Cook Time: 5 minutes

Ingredients:

  • 1 cup vanilla, milk or white chocolate pieces
  • 1 Tablespoon finely chopped candied ginger
  • 1/2 cup coarsely chopped cashew nuts
  • 1 cup chow-mein noodles
  • 1/2 cup pastel-colored miniature marshmallows

Preparation:

In medium saucepan, melt vanilla-milk pieces over very low heat. Remove from heat. Stir in ginger, cashews, noodles, and marshmallows.

Drop by teaspoon on wax paper and chill.

Yield: about 20 to 22 cookies

Note: Most of us know vanilla-milk pieces as white-chocolate pieces, but they cannot legally be labeled as such when made and sold in the United States.
