No-Bake Powerhouse Cookies Recipe

Oatmeal, peanut butter, nuts, and chocolate chips make an easy no-bake cookie for camping, hiking or at home.

Prep Time: 15 minutes

Cook Time: 10 minutes

Total Time: 25 minutes

Ingredients:

  • 1 cup brown sugar
  • 1/4 cup margarine
  • 3 Tablespoons powdered milk
  • 4 Tablespoons water
  • 1 cup oatmeal
  • 1 cup peanut butter
  • 1/2 cup nuts
  • 1/2 teaspoon vanilla
  • 1/4 cup chocolate or carob chips

Preparation:

These cookies are designed to be made in a camping or hiking environment, but work just as well at home.

Mix sugar, margarine, powdered milk, and water in a pan. Bring to a boil. Reduce heat and boil 3 minutes. Stir constantly to prevent scorching. Remove from heat and stir in oatmeal, peanut butter, nuts, vanilla, and chocolate chips.

Drop by spoonfuls onto a flat surface such as pan lids. Let sit for about 10 minutes to set. In hot weather, they might not set as well.

Yield: about 20 to 24 cookies

Powerhouse with a twist, Member crisco0

These cookies are easy and tasty. I would compare it to a light fudge. I made 1/2 recipe and it made about 16. As I started to form them on the pan, I thought ""add some rice crispies cereal"". I did this with the remaining mix adding about 1/2 cup of the cereal. The mixture seized up a little but that was a good thing. I was able to roll large walnut sized balls. The finished product with a crispy, sweet cookie with the chocolate and peanut butter very prominent in the flavor. I'd make these again, and they will definitely be part of my camping repitoire.
